This is one happy girl right here.

It’s sunny, I’m in Bryant Park in one of my all-time favorite cities, and I’m enjoying incredible Speculoos ice cream. Now I’m not usually a fan of having my picture taken, let alone when I’m eating of all things, but this definitely captures a blissful moment.

Next time you’re in the big ol’ city, do yourself a favor and stop by the blink-and-you’d-miss-it Wafels & Dinges and order a waffle cone with the aforementioned Speculoos because it will change your life.

If your sweet tooth is feeling even feistier or you’re just one of those people who subscribe to a go-big-or-go-home life plan, please try one of those big waffle thingies with all the toppings and let me know how it is, please? I’m dying to know, but apparently not enough to forgo the Speculoos.

For the uninitiated, have you ever had those cookies on an American Airlines flight that taste vaguely of gingerbread but infinitely better? That’s Speculoos. Or imagine for a moment if some genius took the Trader Joe’s cookie butter, added cream and spun into velvety submission.   Yep, that’s the thing I’m raving about here. It’s probably good we don’t have a Wafels & Dinges in DFW because this is a perfect hot weather treat.
