Given we had exactly two unsightly bananas gracing the counter, I thought the only responsible thing to do was make banana bread.

And considering how good it smells in the house as we speak, I’m glad I followed my instincts. I’m thinking it’ll make for a pretty good breakfast tomorrow morning.

So I mostly followed Giada DeLaurentiis’s excellent banana bread recipe. I say almost because I made a couple of amendments. First off, I didn’t have any blueberries in the fridge, so I opted for some equally tart dried cranberries instead. I also dusted the top with a little crunchy brown sugar because who doesn’t like a sweet, crunchy top on your quick bread?

Other than that, I followed the recipe to the letter, and if you have a couple of ugly bananas laying around, you should totally do the same. It took all of 15 minutes to whip up and an hour of baking later, you’ve got pure yummyness awaiting. 🙂
