Our last book club selection, Jillian Cantor’s The May House was set in So-Cal, so I really feel like we needed a street taco situation.
But I can never leave well enough alone, so I made chicken al pastor (normal!) and then decided to al pastor some chickpeas too (extra!).
Can I tell you a little secret? I liked the chickpeas even better than the chicken. Oh, and I’ve decided that al pastor is a verb. 😂
So I will say this recipe lives up to the Kitchn’s description of being easy. But there are a decent number of ingredients and steps. All do-able, of course, but may not be the super quick weeknight dinner you’re hoping for. I started the process the night before.
Note: If they don’t have some of the spices or the guajillo chiles at your grocery store, I found everything on Amazon.
Incidentally, this marinade is crazy good. I don’t know why canned pineapple is suddenly so delicious, but it is here. I served the al pastor chickpeas and chicken with cilantro lime rice.
