Once upon a time, Ina Garten made this completely drool-worthy Mocha Chocolate Icebox Cake on Barefoot Contessa (it was one of those moments where I wished I could reach into the television and grab a slice), and she used this impossibly thin chocolate cookies to ensure it set perfectly.

I’d never heard of Tate’s chocolate chip cookies, and of course, it was because they originate in Southhampton, a place I’d yet to visit. So naturally when we finally made our way there as part of our summer East Coast vacation, I had to give them a try.

While I’m generally a chewy cookie person, these crisp chocolate cookies were jam-packed with buttery, chocolaty goodness. And because they were so thin, it wasn’t exactly difficult to polish off a big, especially when your hubby loves chocolate as much as Will does.

When we returned to Texas, I’d forgotten all about these cookies until I was at Target doing a little grocery shopping and noticed that unmistakable green packing in the cookie aisle. Now whenever the craving for super thin chocolate chips arises, we don’t have to travel nearly 1,700 miles. Who knows, maybe I’ll have to make that icebox cake whenever we have people over next…in the words of Ina, “How bad could that be?”
