Anyone know how Taco Tuesday became a thing?

I know, I know, I could Google it, but aren’t tacos pretty fantastic any day of the week? I know one Ashlee Jordan would wholeheartedly agree.

Anyway, when Casey came to visit recently, we took our taco game to the next level by taking a street taco class at Sur La Table. Not only did we learn to make our own corn tortillas for our fish and pulled pork creations, but we made homemade salsa that was given the lightest smoky accent with a smoking gun (this was pretty cool).

Now I know what you’re thinking, flour tortillas are far superior to their corn counterparts, so why not make those instead? Normally, I wholeheartedly agree, but this particular recipe was so good that I didn’t miss the puffy flour variety at all. Plus, there was something about the corn tortilla that made the pulled pork (something I’m usually not all that crazy about either) really sing.

All in all, it was a really fun class and an extremely delicious lunch—and now, I think I have the courage to actually use the tortilla press I got for Christmas, so stay tuned…
