It’s been well documented on my blog that I’m a big fan of Thanksgiving.

So it probably comes as no surprise that I like to make a second Turkey Day-inspired meal just in case some of my favorite dishes were left off the menu on the big day.

So I bought this beautiful, pre-brined herb turkey breast that’s been sitting in my freezer for a couple of months now. Truth is, I never quite got around to making second Thanksgiving. But after yesterday’s Game Day lunch (yay for the food, a giant boooooo for the game), I’m pretty darn happy that I didn’t because the homemade Turkey Pot Pie totally rocked.

Like most Midwesterners, I grew up on the Banquet variety of Turkey Pot Pie, and I always thought they were pretty boss. But then again, I didn’t have anything to compare it to because I didn’t know a homemade variety even existed. And even if you choose to roll out your own crust, the made-from-scratch pie really is a snap (although I’d never tell if you just bought one either).

Aside for subbing in turkey breast for chicken, I used Ina Garten’s totally foolproof recipe. As a total bonus, you’ll have plenty of filling left which I’m planning on turning into a turkey pot pie soup. Mmmm.
