Is there really a bad way to eat a potato? Except for maybe raw?

Mashed, fried, gnocchi-ed (I just made up a new word), hashbrown-ed (there I go again), it’s all scrumptious.

But if I had to choose sides, these baby Hasselback potatoes may be my favorite.

I adapted this recipe to my personal preferences (lots of garlic, lots of herbs), and it gives me everything I want from the humble spud. A crispy, salty exterior without being fried and a soft center that makes a Yukon gold so irresistible.

They’re cute for a party and also serve as a perfect side. When we were a little low on groceries once, they even served as the main event. And no one was mad in the least.
